A little bit about me…. I, Justin Cogley joined Aubergine restaurant in January 2011. Previously opening the Elysian Hotel’s new kitchen as Executive Sous Chef and worked at Charlie Trotter’s critically acclaimed restaurant for four years, claiming the position of Chef de Cuisine for the last two. My style is a sophisticated balance between innovation and unwavering deference for the finest ingredients. Each plate has a purpose in my kitchen with the goal to inspire guests to enjoy a broad combination of flavors and textures.
Prior to a career as a chef, I was a professional international figure skater performing with Feld Entertainment’s “Disney on Ice.” Traveling and touring with the show for four years in Asia, Australia and Europe. My recent inspiration has been joining ultra runners, and triathletes on challenging courses/races, as we live in such a beautiful place to train. I was lucky enough to race 2 full Ironmans this year and 3 Half Ironmans.
Chefs cycle was an easy decision and automatic in for me. Taking on this challenge and to feed hungry kids. Please, join me on this 300 mile ride in Northern California May 16-18 by making a donation and following my journey
